  1. Assuming you are able to leave the airport, you might consider taking the Metro to Nuevos Ministerios. I would not advise going any further. Places like Plaza Mayor and Puerta del Sol have tons of pickpockets. Not worth the potential headaches for 6 hours!

    Nuevos Ministerios also isn't as touristy. More the typical Spanish. There's an El Corte Ingles near Metro with everything, including an excellent supermarket in the basement and a sit-down cafe on the top floor.  It's kinda neat to see Spanish goodies like candies, cookies, etc.  If they have mazapan in stock, definitely try it.

    At the corner of Orense and Raimundo Villaverde, are Mango and/or Zara stores if you want to check out the latest in European style.  There's a Burger King, Starbucks, and Rodilla (Spanish sandwich shop chain).

    If you walk farther along Orense towards Burger King, there's a street vendor who sells nick-nacks and postcards. It's a good place for cheap souvenirs.

    If you walk in the opposite direction along Orense, crossing Villaverde, you'll find yourself in a residential area with some shops and bars. You can find tapas and bocadillos there.

    Keep in mind, though: it takes about 45 minutes to walk from the terminal gates in Barajas Airport to the Metro station to Nuevos Ministerios.  So roundtrip will be 1.5 hours.  Give yourself about 30 minutes for buying tickets (make sure you have Euros!), getting lost, and trying to find Metro exits/entrances. Since your flight to Egypt is international, you will be required to be at the airport no later than 1 hour or you may not be able to board your flight.  So give yourself about a 3-hour buffer. (And on your way back, make sure you take the Aeropuerto stop not the last stop called Barajas.)

  3. If you aren't in transit so you can leave the airport, there is a metro line that links the airport with Nuevos Ministerios in about 10 - 15 minutes, there you can change to other lines. About where to go once you are inside the metro system depends of what do you like, I guess you might like archeology because you are going to Egypt, so you may like to visit Museo Arqueológico Nacional, placed in Calle Serrano, which has a metro station and it's also the fanciest street in Madrid or you can just walk arround the city, so you would like to see Gran Vía, La Puerta del Sol, el Paseo del Prado.
