  1. really only you can answer those questions

  2. Doesn't sound like you have any idea what it takes to open/own a restaurant....I wouldn't even try if I were you.

Just because your grandmother is "going" to teach you how to make tortillas your in for a big surprise. Save your money.

  3. If you have no idea on how to make authentic Mexican food or you don't have someone to teach/ do it for you, then don't even try, I'm a Mexican by the way, I remember I went to this Mexican restaurant one time run by white people worst Mexican food I ever ate, all that aside the food that would be good would be Enchilada plates with rice (w/ carrots and peas in it which is traditional) and refried beans, in fact virtually every plate should come with these sides automatically, other sides include avocado, lettuce, tomato some other plates include of course your tierra y mar (land and sea) which is usually like fajitas and shrimp or fish with sides, fajita plates with sides of course, and a good thing to note when serving fajitas always grill them up and serve with grilled onions, grilled tomatoes, and grilled green bell peppers, and of course my personal favorite dish botana, which is very very good and big you can have botana for two, four, and six people botanas consist of totopos (tortilla chips) on the bottom smeared and smotherd with beans and melted cheese, on top of that you put fajitas of their choice beef or chicken or both, mixed of course with the vegetables i mentioned above, always serve a plate of rice and refried beans with this, and of course your lettuce avocado etc. on the side, and tortillas, other dishes include your milanesa of course hamburger plates for the kids, t-bone steaks, you should also offer menudo on the weekends, you should also have flautas, chalupas, oh and always a Mexican plate which is like two enchiladas, a crispy shell beef taco, fajitas and sides like a sampler, soups would include beef soup, tortilla soup, and seafood soup, I guess you can also have tacos jaliscos, or bolios (fried bun bread tacos), with fajita or bistek but thats for more like a taqueria, not really a mexican restaurant, sides with this should be a loaded baked potato, and frijoles a la charra in a cup or bowl, always have frijoles a la charra in your resaurant no matter what, oh and one last thing always include flour tortillas with practically everything by default, and when customers arrive always bring tortilla chips with salsa immediately, as for prices your plates should probably be no more than like 8-14 dollars, fajita is gonna cost more all the time, as for the botanas the six person should be like in the 30 or 40 something dollar range depending on the portions of course, I think that the look should be casual put some Mexican oriented pictures and things around the restaurant, have your waiters dress pretty nice though, white long sleeve shirt black slacks kinda thing, theres other dishes of course but those are ones that I can remember, lol, as for the restaurant name it should be something in Spanish but something simple that anyone can pronounce with ease, follow these things and people will keep coming back, hope this helps and good luck...

  4. Your type of restaurant upscale or casual might depend on the community you are putting it in.   The two most important factors in having a successful restaurant is the quality of the food.  The food should taste the same whether you go there on a Monday night or a Friday noon.  The other thing is too buy quality ingredients.  Of course your prices will reflect that at least somewhat.  You will need to figure the cost per plate for each plate and then add your overhead cost and some profit to the price.
