1. Hi, first of all congratulations on the wedding and on your cookingfor the reception!!! What a great present you are giving your son!

    I have a lot of experience in feeding large numbers of friends and family and I find that the amount of meat people eat depends on a number of factors.

    First of all, at a big reception like the one you are preparing, with many delicious offerings on the table, people tend not eat that much meat.

    It also depends if they will be sitting down ( i.e, will the be able to use forks and knifes, or will they have to hold the plate in their hands? )

    What I find works best are:

    Lots of pasta dishes, with many different sauces - avoid the creamy ones that tend to look unappetizing when they cool down and go for fresh vegetables;

    Lots of fresh salads, with different types of lettuces and fancy added bits, like apple slices, or avocados, broccoli florets, etc;

    Also coleslaw, perhaps with added raisins, and potato salads, perhaps with added bell peppers, just for colors and yummyness;

    Don't forget quiches ( easy to make in advance, they freeze well and are always a problem solver ) and terrines.

    With all these things, plus your ham and chicken - a perfect idea - I don't think you will need other meat dishes.

    Again, best of luck with the reception and many congratulations!!!

    This site says for 100:

    25 lb. smoked ham

    20 lb. boiled boneless ham

    35 lb. potatoes or 12 qt. potato salad

    20 lbs. meat

    chicken - 40 lbs

    and this site says:

    "The evening before the supper I cooked enough

    spaghetti for 144 servings (based on package comments). I did 18 pounds dry spaghetti."

    Don't know how accurate these amounts may be . . . but there seem to be a lot of helpful tips at these sites.

  4. i think the general rule is usually that 1 pound of food will feed 3 to 4 people. so based on that, for 85 people, you would need between 20 and 25 pounds of each food.
