I am taking a caterring course next year. any idea for dishes?

i have also been pre warned that the final exam will be on a 3 course meal for a wedding. any ideas in a decent budget.

  1. Don't you think it'a a little soon to worry about that? The instructor will assign dishes for you to make, and by then you will have an idea what you want to do.


  2. Personally I would go with a cultural theme - what is the highest culture in your area. If you have a large number of latinos you may want to try Latin festival foods like Tamales and Pollo Voracho then make mini items for appetisers and some cleverly updated side dishes. The art of cooking is not so much about duplicating a recipe but giving it your own flair and subtle touches to make the mundane gormet. To be sucessful in the Catering business you have to offer the best choice as well as the most lovely display. A wedding is a once in a lifetime event and the taste, presentation and ultimately valuse will all be factors in that sucess. Cost is determined most by what you offer and how well it is presented. Look at other catering models in your area for inspiration but ultimately look to see what is lacking and there you will find your answer and most likely your high final marks. Good Luck!
