A balloon trip is romantic and exciting. Otherwise companies like Virgin offer packages were you can drive a Ferrari or an aeroplane driving lesson.

Well, I'm not in Dublin, but I am ancestrally Irish - check out my red hair!! Anyway, I crew for a hot air balloon here in Arkansas, USA, and I have heard of some great "champagne flights" they do in your part of the world. Perhaps you could plan a weekend with a hot air balloon excursion. Of course, it would depend on your weather at this time of year... I highly recommend ballooning - very fun!
