Question:

I am vegetarian and cook a lot. I was just wondering if anyone has some vegetarian meal that just rocks?

i cook a lot of pasta and black bean and rice burgers and mushrooms. i don't really care for eggplant or tomato. just always looking for some new recipes.

  1. As a little kid my favorite food used to be what I call Mexican Pizza. Put two tortillas on a cookie sheet. Then on top of that layer with refried beans. Add another tortilla on top. Then smother that tortilla with salsa (I'm assuming you like salsa though you said you don't care for tomatoes) of any kind, though I prefer lime and garlic or anything spicy. On top of that add some shredded cheese and bake for about 15 minutes or untill the tortillas are chrunchy and look flaky. Its SOOOO good, I hope you try it!

    Oh and also for lasagna if you eat "fake meat", add some stuff call TVP. Its looks, tastes, and has the same nutrition as meat. You could also put it in chili.

    Pasta Primavera

    3 carrots, peeled and cut into thin strips

    2 medium zucchini or 1 large zucchini, cut into thin strips

    2 yellow squash, cut into thin strips

    1 onion, thinly sliced

    1 yellow bell pepper, cut into thin strips

    1 red bell pepper, cut into thin strips

    1/4 cup olive oil

    Kosher salt and freshly ground black pepper

    1 tablespoon dried Italian herbs or herbes de Provence

    1 pound farfalle (bowtie pasta)

    15 cherry tomatoes, halved

    1/2 cup grated Parmesan

    Preheat the oven to 450 degrees F.

    On a large heavy baking sheet, toss all of the vegetables with the oil, salt, pepper, and dried herbs to coat. Transfer half of the vegetable mixture to another heavy large baking sheet and arrange evenly over the baking sheets. Bake until the carrots are tender and the vegetables begin to brown, stirring after the first 10 minutes, about 20 minutes total.

    Meanwhile, cook the pasta in a large pot of boiling salted water until al dente, tender but still firm to the bite, about 8 minutes. Drain, reserving 1 cup of the cooking liquid.

    Toss the pasta with the vegetable mixtures in a large bowl to combine. Toss with the cherry tomatoes and enough reserved cooking liquid to moisten. Season the pasta with salt and pepper, to taste. Sprinkle with the Parmesan and serve immediately.

    my husband is the biggest meat eater ever, but CONSTANTLY requests this meatless dish. it seems like alot of vegetables (about 2 cookie sheets) and sometimes i even add a little more than called for, but they really shrink down. make sure to use a good quality parmesan, as it is a key flavor component. this is good hot, room temp, even cold.

  9. Tofu tacos, baby!

    Fry firm tofu strips in crazy hot oil

          drain fat from pan

          add finely chopped onion, garlic, chipotle's, seeded tomatos or can   o' crushed toms, I like black beans in there too. Season to taste with quality chili powder, ground cumin, oregano or cilantro (corriander) or both, black pepper.

    Make taco's with that mix. Fix 'em up, con queso, fun rice, lettuce, whatev's. "Big jeepin' y'all!!"

    Also google Aloo Gobi recipes. Good god, I could eat that everyday. East indian food is kind of a big deal when it comes to being veg.

  16. If you like pasta, try lasagna rolls. They are REALLY good! Just cook the pasta until it's al dente. In a large bowl, mix spahgetti sauce and additional fillers of your choice - sauteed mushrooms, green peppers, onions, garlic, veggie ground beef, pesto, cheese, etc. Rinse the noodles in cold water and let them sit in the water to keep them from sticking or continuing to cook. Take one noodle at a time and lay it on your cutting board. Spread a generous amount of your mixture on the noodle. Start at one end and roll the noodle into a spiral. Place in a baking dish. Once the baking dish is full, pour any excess sauce over the top. Bake at 350 (F) for about a half hour. Remove and top with your fave type of cheese. Stick it back in the oven until the cheese starts to brown or bubble.

    It's simple and tasty....plus you usually have leftovers for the next day!

    Are you looking for purely veggie meals or the equivalent of a standard, but veggie version?

  18. I would HIGHLY recommend you getting a great Indian cookbook. They have TONS of vegetarian meals that taste amazing.

    I would highly discourage you from eating "a lot" of pasta. I know many vegetarians who substitute nutrients and protein for starches such as potatoes and pastas. As a nutritionist I see this very frequently.

    There are MANY MANY overweight vegetarians out there because they don't actually eat vegetables. One of my friends who's a vegetarian goes to McDonalds practically 4 times a week and she gets 2 large fries and an apple pie... Vegetarian yes....Nutritious no. For about the same price she could get a vegan falafel and rice which would give her TONS of protein so not only would she feel satiated.

  20. i make split pea soup and the recipe is:

    some pepper (a tablespoon)

    some warm cooked peas

    milk (1/2 cup)

    tabasco sauce (a teaspoon)

    and mix this all together bring it to a boil and then add some parmesan cheese on top.

  21. rice and veggie burritos.  just cook some rice and fry it in a pan with some soy sauce or whatever stuff you want.  take whatever veggies you want and cook them.  toss them with the rice (i add eggs, but that's optional)  put a layer of refried beans on the tortilla and then spread the rice and veggies

  22. Vegetarian chili.  It has no meat, just rice, beans, and some other ingredients.  But if you google it, i'm sure that you could find out the recipe! It tastes delicious too!

  23. you haven't tried the umpteen possibilities thrown up by Indian vegetarian cooking. try it at a restaurant to see if you enjoy the different flavors. stock up on some of the indian spices & masalas & herbs to pep up your dishes. also try different dals (pulses) besides kidney or black beans. i strongly suggest a visit to any indian grocery store to get a feel of the variety & sample some  frozen or precooked packaged dishes. eventually try them out yourself at home.

  24. I get the  vegetarian  times at my house it has really good meals to cook and their is also a lot to chose from.Also i would get a vegetarian cookbook the have lots of them.The have it for almost anything to replace stuff.

    they are crazy good, get some dill pickle slices and bread them as you please. deep fry til crispy outer shell forms

  26. Eat some vegetarian pizza or get creative and make spaghetti! Ohh and you know what else is awesome. vegetarian sausage biscuits! Get some veggie sausage and fire up the stove!
