I am writing a letter to my instructor...what else should I put in it?

Dear Mr. ______,

I wanted to thank you for being such a great instructor while it was my first quarter at ***** Community College. You are such a funny and very sweet instructor. I also wanted to wish you a Happy Birthday!

I am not sure what else to put in it. I really want to express how much the class made me come out of my shell (I am overcoming serious depression and anxiety). But I don't want to get into too much detail.

How can I do this? Please help!!

    Dear Mr. ----

    I just wanted to thank you. You have made this first quarter remarkable. I have really enjoyed your humor and wit. I believe the impression your class has made on me, will stay with me throughout my time here, and perhaps after-ward's.

    Happy Birthday too.

    This will definitely get the point across, without being too personal.

    2nd paragraph?  here's a little something:

    I really want to complement your teaching style.  Your leadership of the class created a nurturing, comfortable environment, one that helped shy old me come out of my shell.
