she took it out of the oven or broiler(not sure)She said she grew up on it.Is this typical of all Argentinians to eat this type of meat and if so is it the cow or pig intestines and what is the recipe called?

The Mexican culture has Menudo.  Perhaps, if you looked up recipes for this on line, other intestinal recipes would come up, too.
