I bought a cookie sheet with gingerbread men shapes IN it and need a recipe/tips on how to use it.

Would I use a cake mix type cookie dough or press cookie dough in the mold?

I've had a 2 pans for almost 20 years that I ordered from Nestle.  There are 2 boy and 2 girl gingerbread people on each cookie sheet.  I make cookies with them every Christmas and everyone loves them.  I use chocolate chip cookie dough with mini chocolate chips.  I put the dough in the freezer so it won't stick to my hands when I put it in the mold.  Spray the cookie sheet indentions with Pam before you put in the dough.  You don't have to fill the mold completely, the cookie will spread as it cooks.  Bake them at 350-375° for 7-10 minutes.  You'll just need to experiment to see how it works best for you.  After the cookies are done, let them cool a bit and then gently pry them out with a butter knife.  The boys are a little bit trickier to take out because they have 2 legs - you don't want them to lose a leg.  Be sure to wipe the excess Pam off the sheet with a paper towel before putting in more dough.  (You'll need to re-spray it with Pam each time.)  Once they're done, I use a decorator tip and bag with canned chocolate frosting to make eyes, mouth, hair, "clothes," etc.  I put 3 buttons on the girls and 2 buttons on the boys and put a mini red/green M&M on top of the icing (the icing "glues" the M&M to the cookie).  I've had lots of fun with the cookie sheets - I only wish I had more than 2.

Well I never saw this kind of cookie pan.  I have a cake pan in the shape of a gingerbread man I make the cake in it.  I have used this since mykids were very little and now it's tradition even though they will be 13 shortly.  Anyway...I think I would press gingerbread cookie dough into the shapes.  

    here is a good recipe for the cookies.  You won't be rolling the dough or cutting them out but patting the dough into the shapes.

    1/2 cup firmly packed brown sugar

    1/2 cup vegetable shortening

    1 cup corn syrup (light or dark)

    4 cups all-purpose flour

    2 1/2 teaspoons ground ginger

    1 1/2 teaspoons ground cinnamon

    1/2 teaspoon salt

    1/2 teaspoon grated nutmeg

    1/4 teaspoon allspice

    Place the brown sugar, shortening, and corn syrup in a saucepan and heat on medium, stirring constantly until the shortening is melted.

    Place all of the dry ingredients in a large bowl; then add the warm sugar mixture, stirring until all of the ingredients are well blended. The dough will appear crumbly but will hold together when rolled out.

    Use the dough immediately, while it is still warm. If it starts to crumble, place it in a warm oven for 1 to 2 minutes until it softens a bit.

    To make decorated cutout cookies; Roll out the dough to about 1/8-inch thick on a lightly floured surface. Cut out gingerbread women and men with cookie cutters. Place the cookies on foil-lined cookie sheets and bake until golden brown, about 10 to 15 minutes. Cool the cookies on racks before decorating.
