I bought some rather expensive hydroponic lettuce that is 'alive' -it has thick roots and they are in water,,,

Question

what is the purpose of this and how is it different from other lettuce aside from the fact that it was grown pesticide free. What I mean is -is there an additional benefit to it being alive instead of dead?

Stays fresh longer. It would be like going out to your garden every day to pick a few leaves.
