  1. A day at the beach is great!  Nice cool breeze, sea gulls singing a song to the hum of the surf, beautiful people barely dressed, relaxing in the warmth of the sun...

    It simply means she is NOT someone enjoyable that brings happy thoughts to mind when you think of her.  She is unpleasant to deal with and less than a desirable person to hang out with.

    Days at the beach are fun, but she wasn't one... so she was probably a *****

    She was one day at the beach.

    Maybe look at the context of how it was written. For example the preceding sentences and those that followed it.

    She did not have a good day at the beach?

    I don't know lol...

  5. She was not fun to be around. She was a pain in the buttocks.
