I don't drink any kind of alcohols,can i replace the rheum, wine, vodka, gin etc from the recipes?

is the any kind of ingredients that i should add to the recipes if i dont used any kind of alchohols??is the any different in the food texture or it just the smell?

Yes, you may eliminate alcohol from most dishes without sacrificing flavor, however remember that the actual alcohol cookes out ( is evaporated) during cooking. In sweets, there are substitutute extracts and in savory dishes you can use water, broth, fruit juices or lemon juice in may of them. Just don't use the cooking wines, use non-alcoholic alternative wines, instead.

It depends on the dish.... wine is somewhat easy to replace (use sugar and vinegar like mentioned above) but it would be hard to replicate the flavor in something like a rum cake.

My question is why do you need to replace the alcohol so badly?? My mom is a drug and alcohol counselor and a recovering addict and she sees no problem with occasionally eating food that is cooked with alcohol because the alcohol burns off only leaving an almost completely different flavor anyway. You just need to be sure that you cook it. ;)

It is true most alcohol in cooking evaporates and the flavor is left.  Some recipes you can substitute lemon juice or vinegar, sometimes it's a sweet flavor that is called for, but all in all, just use the alcohol or leave it out all together. Find out what flavor the alcohol is to leave and improvise accordingly by adding sugar maybe or vinegar or lemon juice.  It will taste different, but if you don't have it, what can you do?

Some dishes that require eg wine like many french dishes won't taste the same without it. Even if you don't drink wine etc. you might add it since most of the alcohol evaporates by cooking.
