I dont understand the Term "Soul Food"?

I grew up eating what is refered to as soul food, It is really just country cooking. Where did that term originate?

  2. Soul food is an American cuisine, a selection of foods, and is the traditional cuisine of African Americans of the Southern United States and of black communities beyond. In the mid-1960s, "soul" was a common adjective used to describe African American culture, and thus the name "soul food" was derived.
