I got hired for Houlihan's as part of their expo. What does that person do?

Not a Houlihan's employee, but I've been in the restaurant business my share of years.  Expo or Expediter basically is the middle man between the cooks preparing the food in the kitchen and the servers who take the food to the guests.  The Expo's job is the make sure all the plates at table #29 are ready before the server starts taking it to table #29.  Also, those extras like steaknives, extra sides of butter, or broccoli instead of fries are the Expo person's job to make happen.  It's a simple job, but not easy.  It can get hot back in the kitchen and when it's busy you've got servers one on side yelling at you and you've got to be yelling at the cooks.  But this bonus of this job is you will learn the menu and food very quickly so you can work in other (possibly more lucrative) areas of the store.  May be best if you've got thick skin and work well under pressure, especially if this particular Houlihan's is a busy place.
