  1. Possibly was it one of these?

    All Star Mexican Dip

This will be one of the best layered dips you've ever tasted. You can make it a bit heartier by adding a layer of refried beans at the bottom.

    1 pound lean ground beef

1 (16 oz.) jar taco sauce

1 (16 oz.) container sour cream

1 (8 oz.) pkg. cream cheese, softened

1 (1 oz.) pkg. taco seasoning mix

1 (16 oz.) pkg. shredded Cheddar cheese

    1 cup lettuce, shredded

    1 tomato, cubed

    2 green onions, sliced

1 (2 oz.) can sliced black olives, drained

    Directions

Crumble the ground beef in a large skillet. Cook over medium high heat until evenly brown. Drain and mix in the taco sauce; set aside.

In a large bowl, combine the sour cream, cream cheese and taco seasoning mix. Spread the mixture into a large serving dish.

Layer the sour cream mixture with the beef mixture, Cheddar cheese and lettuce. Top with tomato, green onions and black olives.

    Tex-Mex Style Dip

A very good dip made featuring Monterey Jack Cheese, Mexican style cheese, cream cheese and beef.

1 (8 oz.) pkg. cream cheese, softened

1 pound extra lean ground beef

1 (1.25 oz.) pkg. taco seasoning mix

    2/3 cup water

    1/2 cup salsa

    1/4 cup jalapeno pepper, chopped

2 cups shredded Mexican style cheese

2 cups shredded Monterey Jack cheese

    Directions

Preheat oven to 350 degrees. Prepare a 9-inch pie plate with vegetable oil spray.

Press the cream cheese evenly onto the bottom of the pie plate.

In a large skillet, brown the hamburger. Drain off the excess fat.

Mix in the taco seasoning and water. Cook and stir 2 to 4 minutes. Remove the skillet from the heat. Mix in the salsa and jalapenos.

Pour the beef mixture over the cream cheese in the pie plate. Sprinkle the Mexican style cheese and Monterey Jack cheese on top.

Bake until the cheese has melted

Serve directly from the crockpot or move to a chafing dish, with tortilla chips for dipping.

  2. Here is a stupid-simple recipe:

    Ingredients:

        * 1 pack cream cheese (8 oz)

        * 1 can diced tomatoes

        * ½ pound meat – sausage or hamburger (optional)

    Directions:

       1. Cook sausage or hamburger using a fork to crumble it fine as it’s cooking.

       2. Drain fat off meat.

       3. Combine cheese, tomatoes, and meat in pot on top of stove or in crock pot and heat until cheese is melted.

       4. Stir well before, a few times during, and after melting cheese.

  3. it's velveeta cheese, a block of cream cheese, hamburger meat, and rotel. just cook the meat, and mix all of the stuff into the crock pot. its delicious. :)
