I have J2SE runtime environment 5.0 update 9 & 10. can i delete these if i have 11 on there as well?

It depends on the software you have installed.  For instance Netbeans 5.1 will only use java 1.5.14.  Unless you have special software that uses a specific version of java then deleting the older ones will be fine.  The latest version out is 6.7

Most of these update build on each other.  If it is not killing your space, leave them there.  There is probably something else you can delete instead like a messaging program.  Typically, an application will "clean up" old versions if it's needed.  I recommend leaving them.
