I have a 2007 Camry Hybrid. Had dead 12V battery after 8hr parking 2x. What causes this? How can I prevent?

You may have a parasitic load. Get the battery load tested to make sure it is OK  at the dealers, if it is they will trace the parasitic load and repair it....usually a light or module that will not go to sleep....or if you have a aftermarket alarm, it might be that as they fail often....you are under warranty I assume based on the year.
