  1. I always use either a bolla or pinot grigio, and remember the old saying don't use something you would not drink.


  2. A dry white one.  I suggest Essence of McCain.

  3. A sauvignon is a great white wine for cooking or a pinot grigio (Turning Leaf is tasty).
