You can.It will not affect you a/c at all.Most newer furnaces no longer utilize a standing pilot though, so you really won't be saving anymore than you would, if you just left it on.Good luck.

There is no need to shut the gas off. Since the unit isn't using any gas( has no pilot light). Unless you want to save  the base/meter charge. Be warned, there maybe a fee to disconnect and reconnect. Also is your water heater gas?
