I have a big bag of MASECA brand corn masa in my pantry.. What can I use this for? Any good and EASY recipes with minimal ingredients?

  1. Well, Tamales are ONE option -- they take some time  to steam.

    Another is Arepas -- they are yummy, short on ingredients list, easy to make and very very kid-friendly -- they'll be gone before you know it ! Although it is usually made from pre-cooked cornmeal available in Hispanic grocery stores, I think Masa might also work.

    Ingredients:

    2 1/2 cups milk

    1/2 stick (1/4 cup) unsalted butter, cut into pieces

    1 1/2 cups white arepa flour* (precooked cornmeal)

    1 teaspoon salt

    1 tablespoon sugar (optional)

    1 cup grated mozzarella

    2 tablespoons vegetable oil



    Instructions:

    Bring milk to a simmer in a small saucepan, then remove from heat and stir in butter.

    Combine arepa flour, salt, sugar, and mozzarella in a large bowl.

    Add hot milk and stir until combined. Let mixture stand until milk is absorbed enough for a soft dough to form, 1 to 2 minutes (dough will continue to stiffen).

    Form dough into 12 balls (about 2 inches in diameter) and flatten between palms into 3 1/2- to 4-inch patties (about 1/3 inch thick).

    Heat 1 tablespoon oil in a large nonstick skillet over moderately low heat until hot, then cook 3 or 4 arepas until cooked through and golden in patches, 6 to 8 minutes on each side. Make more arepas in same manner, adding oil as needed.

    *Note

    Arepa flour may be found in some Hispanic markets or grocery stores.

    Makes 12 servings.

  3. tortillas or gorditas, follow the directions on the package for mixing  for tortillas,then put the ball on the tortlla press and then put it on a hot comal. for gorditas basically the same in the beginning but you have to pat it out round and thicker than a tortilla its really all about trial and error. i use the tortilla press to make gorditas cause i cant with just my hands. for cutting them open after there done i have found out you have to cut them open as soon as you take them off the comal or there hard to open. use a serarrated knife ive had better luck with those knives than a regular one. the gordita fluffs up when its done. then you put what ever you want to in side.

  4. masa is just corn meal so you could probably make an easy cheese polenta. If you go to food network.com Guy makes a lot of various quick foods with masa, and there are various recipes for polenta.

    apparently masa is lye soaked, but there are various grains of polenta, so if you get bored you can always try a culinary adventure. That's how fry bread was invented. The Native Americans didn't understand how to use flour, so they figured out a way to use it and it turned out to actually taste good.

  6. Gorditas! Not the taco bell kind. They are pretty easy to make (mix like it tells you to for making the corn tortillas on the bag but add about 1/4 cup of flour to the dry mix) Make a ball, let it rise for about 10 minutes out of the air. Divide it into balls then press them to about palm size inch thick pancakes...fry them in oil, both sides (make sure to spoon the hot oil onto the top as you're making them) then drain on a paper towel and slice them open and use them as pita pockets for taco meat or whatever you prefer.

    Also, try making some corn tortillas...you'll have to use wax paper and press really hard (tortilla press works great) but then you can fry them and make home made Chalupas or cut them in fourths and make homemade Tortilla chips.

    Try it, you might like it!
