Question:

I have a handful of scotch bonnet peppers and would like to pickle them. any advice? ?

my aunt in texas makes me pickled okra for christmas every year, but i have been unable to get in touch with her. Any advice on canning, spices, vinegar, salt, etc., i would greatly appreciate. mind you i love vinegar and salt, so please leave me a few leads or recipes.

  1. how about infusing them in oil.....thell look lovley in a bottle and the peppered oil will go great with lots of dishes that need a lil kick


  2. I honestly haven't a clue as to how to pickle peppers.....but you should use caution when handling peppers...the oils remain on your hands...and can burn you...

    have a solution of 2 cups water and 1/4 cup bleach...rinse your hands everyt ime you handle the peppers...better yet wear gloves.

  3. All my recipes call for a couple of pounds of peppers.  So go to this website and punch in how many servings you think you have.  If you really only have a handful perhaps you could say 2 servings and it will give you the correct proportions.  Hope this helps.

    If you have at least 2-3 pounds you can use this recipe;

    3lbs of Hot Peppers

    6 cups Vinegar

    2 Cups Water

    3 cloves garlic, crushed (optional)

    Combine vinegar, water and garlic in a large sauce pot. Bring mixture to a boil; reduce heat and simmer 5 min. Discard garlic. Pack peppers into hot jars, leaving 1/4 in. headspace. Ladle pickling mixture over peppers also leaving 1/4 in. headspace. Remove air bubbles. Process 10 min in boiling water canner. Yields about 5 pints.
