I have a little bit of halibut.?

Just one filet but it's just me and I want to make 2 meals out of it. What are your favorite ways to cook it up.

  1. bake in oven with a little olive oil, white wine, s/p. top with a little breadcrumb.

    SAUCE: if you have time take raw garlic, shallot(onion) chop up and saute with s/p if you have fresh basil add it in sautee on low heat until golden- add a little white wine and let it reduce by half-slowly add cold peices of butter and continue to stir till melted nicely together- add a splash of heavy cream- this sauce is a buerre blanc sauce and is made to go on top of  many high end seafood dishes.  excellent sauce!


  2. marinate it in :

    1/3 cup soy sauce

    1/3 cup vegetable oil

    1/3 cup bourbon whiskey

    and pan sear :]

  3. MArinated in a combination of orange, lemon and lime juice and then broil it.  Use it on a green salad with a citrus or other vinaigrette
