Check the water temperature, make sure it's around 78°F.  If the water is too cool, it'll stress them and cause them to lose their color.

Also check the water quality, make sure ammonia and nitrites are at 0 ppm, nitrates under 20 ppm.  If the water quality is off, they're usually the first fish to show because they're so sensitive.
