I can answer this for you. She needs to apply for the visa in Bangkok. The Australian embassy there no longer handles the applications but it is now done by a 3rd party agent, VFS (Thailand) Ltd.  

The Australian Visa Application Centre is located at:

You can download the forms required from the website. These need to be completed and submitted to this office or (I think) one of their courier centers along with the application fee (about BHT2500 from memory) they will also need a letter from you along with photos of the 2 of you together and copies of her bank account records to see if she has money to support herself. A letter from her employer stating her job and salery is also required.

As you can see it is not an easy thing to do but as long as all the paper work is in line then you should have no problems.

She'll need a passport and a visa for Australia.  I'm not aware that she would need anything from Thailand.

I don't know Australia specifically but I would start by trying to contact the Thai consulate or embassy.  The visa would have to be issued by Australia, but the Thai embassy could probably help you on all the issues, and tell you who to contact in Australia.

Alternatively, and probably better, is to have HER find the Australian consultate or embassy in Thailand, since THEY will be the ones that can make the arrangements and she'll have to fill out applications and show ID and all kinds of stuff.

So thinking about it, it's better that she find the Australian embassy in Thailand, rather than you find the Thai embassy in Australia.
