I have a trek 1200 from 2000. What kind of bottom bracket and headset came with?

I am trying to replace the parks and order online to be cheaper. Can I attach any kind of bottom bracket and headset or do I need to have a specific BB and headset?

No - And you'll need a host of VERY specific tools to get the job(s) done.  Just save yourself the headache and have a Professional Bike Shop do it.

Headset is 1 and 1/8 threadless like Cane Creek's S3

Bottom Bracket is quare taper Shimano...  You'll need to pull and measure - because of a lot of spec change from that point in time.
