Question:

I have all these veggies i need to use?

i have fennel, red pepper,kale,eggplant,zucchini,carrots celery. i want too use them to make dinner but i don't know what to make. can anyone help?

i don't think i want pasta, i would assume this would be the most common answer to my question.

thanks for any ideas

  1. How about cutting them all up and sauteing in olive oil or sesame seed oil.

    Stir in some cooked rice and add soy sauce ...for a veggie fried rice?

  3. Boil a chicken or chicken parts with bones for a while, then add the veggies.  SOUP!

  5. MINESTRONE SOUP

    I visited Italy last summer and my friend (a native) showed me this recipe.  It litterally can be any amount of any vegetable mixture.  The last time I made it I used 12 different vegetables.  Chopping it up small makes it cook faster....exactly why she does it.

    If you have a food processor, throw them ALL in and anything else (veggie) you have.  Chop until very small.  

    In the bottom of a soup pot, saute some onions & garlic in olive oil until soft.  Throw in all the veggies and saute for a few more minutes.  Cover with water and add 2-4 bouillion cubes (veggie, chicken are best).  Bring to a boil, cover and cook (slow boil) for 30  minutes.  

    Add some tiny pasta (or rice) and cook until tender.  

    Serve with grated parmesan cheese.  Yummy!

  6. Make scrambled eggs and add the veggies that sound good to you in them.  We did that the other night to have a cheap meal and to use up our veggies.  I mixed eggs, cheese, tomatoes, and squash together.  It was so good!

  7. set the red pepper aside and chop up everything else. Season with salt and pepper and stuff the red pepper with the mix. cook at 350-400 for about thirty minutes, in a shallow pan with a bit of liquid.

  8. hmmmm try a stir fry with possibly some chicken or shrimp. I would saute the carrots with the meat since they can take longer to cook, and the kale last b/c cooking it too long will break down any nutritional value (plus it will get soggy) try sauting in like soy sauce or rice oil. Now I am super hungry! Maybe I will come to your house for supper!! LOL
