I am Australian and i will be 18 when i am going there. I want to stay there for 12 - 24 months?

You can do it under the table! (and lie to immigration - tell them your on holiday).  This is has a certain risk though...

OR do it the legal way:

get an "au pair" visa (which is called an "assistant" visa) at the French embassy in Australia.  The steps to do this are on the French embassy website for Austrailia:

It takes potentially a couple months to process so get this in now...
