I have just made my hair spikey with hair gel?

What will happen when it dry's out - will it become non spikey? (Will I have made a effort for nothing I mean).

if you have used a decent hair gel it should remain relatively spikey. depending on the length of your hair it may flop slightly but not much. fix it with a bit of hairspray and you should be fine.
