  1. Spinach Cream Cheese Won Tons

    Ingredients:

    1 package frozen chopped spinach

    10 oz. extra firm tofu

    4-5 cloves chopped garlic (or to taste)

    Salt & pepper

    2 tsp. Worcestershire sauce

    1 tsp. sesame oil

    1 Tbsp. soy sauce

    1 package (8 oz.) Philadelphia Cream Cheese, softened

    1 egg, lightly beaten

    1 package won ton pi wrappers (50 count)

    Oil for frying

    Dipping Sauce

    Preparation:

    Place unwrapped, frozen spinach in microwave safe bowl. Microwave on high for 2 1/2 minutes or until thawed. Squeeze all moisture from spinach and return to bowl. While spinach is thawing, wrap the tofu in a clean cloth and press to drain all excess moisture. Change cloths if necessary. Crumble tofu into spinach. Add all other ingredients except egg. Using your hands or a food processor, thoroughly combine all ingredients until uniform. Add egg and combine again. Set filling aside.

    Set up an assembly line of as many wrappers as your table or counter will hold. Place 1 heaping teaspoon of filling in the middle of each wrapper. Dab your finger in some water and run it along two edges to create a glue. Fold one side up and over the filling to create a triangle. Press down tightly around filling to create an air proof seal.

    Drop wontons in batches of 5-6 at a time into 350 degrees F oil till golden. Drain and serve with dipping sauce.

  3. This delicious salad is one of my favorite tofu recipes. Serve it cold, on leaves of your favorite lettuce.

    1 package of extra-firm tofu, drained and chopped into small pieces

    ¼ cup diced celery

    1 cup seedless green grapes cut into halves

    ¼ cup diced apple

    ¼ cup walnut or pecan pieces

    ¼ tsp. salt

    ¼ tsp. Alpine Pepper or white pepper

    ½ cup mayonnaise (or vegan substitute)

    Mix together the mayonnaise, salt and Alpine Pepper or white pepper. Gently mix the chopped tofu with the celery, grapes, apples and nutmeats and fold into the dressing mix, until well coated. Chill several hours before serving.

  4. well im more of a sweet tooth  so i normally cube it( cut it into bite size cubes) put it in a blender( or use a mixer) add sugar(according to amount of tofu and personal taste sometimes i dont use any) add some fruit(whatever you prefer i freeze my fruit before hand to make it cooler, i use strawberry blueberrys rasberrys bananas) vanilla soy milk( about 1/4 cup) blend in the blender until slightly thick and extremely smooth, if too thick add more soy milk,if too thin add more frozen fruit. Pour it in a nice tall glass add a straw if u want

    sip and enjoy!!
