I have some decorative bamboo that has really been healthy and thriving for a year or so now?

I have kept it in water crystals since we bought it and up until now it has done incredibly well. we found a great spot with indirect sunlight and it has about doubbled is size since we got it. in the past two weeks though three of the seven stalks have turned yellow died off and rotted. there are new shoots growing off of these. if i were to cut the new shoots off of the dead stalks, would they take and continue to grow? also is there any conditions that i could change to keep the remaining healthy stalks from doing the same. the plants are so mature and beautiful i would hate to lose them
