Question:

I have some tofu in my fridge......?

...how long does it stay "good" and what can I do with it besides Asian-style dishes. It's firm tofu, not extra firm.

  1. marinate in the fridge at least an hour w/ your favorite flavor of bbq sauce and bake in the oven about 30-40 minutes at 350, take it out, and slice it for sandwiches, serve on kaiser roolls.  The package I have says once opened use within 5 days


  2. Check the expiration date. If it is still good, cube it, coat it in cornmeal and garlic powder mix, and grill it. You can then toss it in a salad, or eat it plain. I like it crispy.

  3. it's never really "good". you can use the packaging to put your marbles in, just throw out the weird thing floating inside

  6. There should be an expiration date stamped on the package. Not more than a couple of days past that would still be okay to use it.

    Grilled Tofu with Asiago and Walnut Pesto Recipe

    Pesto:

    1/2 cup grated Asiago cheese

    1/2 cup chopped fresh flat-leaf parsley

    1/4 cup chopped walnuts

    1 tablespoon (about 5 leaves), chopped fresh sage

    1 garlic clove, roughly chopped

    5 tablespoons grapeseed oil

    1/4 teaspoon kosher salt

    1/4 teaspoon freshly ground black pepper

    Tofu

    14 ounces firm tofu, drained and patted dry with paper towels

    3 tablespoons extra-virgin olive oil

    Salt and freshly ground black pepper

    For the Asiago and Walnut Pesto:

    Place all the ingredients in the bowl of a food processor. Pulse until smooth.

    Place a grill pan over medium-high heat or preheat a gas or charcoal grill. Cut the tofu in half diagonally to make 2 large triangles. Cut each large triangle in half to make 4 smaller triangles. Place the triangles, long side down, on a cutting board and carefully cut each into 3 slices. Brush the tofu triangles, on each side, with the extra-virgin olive oil. Season with salt and pepper. Grill the tofu for 2 minutes on each side.

    Carefully transfer the tofu to a serving platter. Spoon the pesto over the tofu and serve.

  8. If you want to let it keep its current texture, keep your tofu in a container of water in the fridge. You can keep it like this for up to a week, but you need to change the water it sits in once a day in order for it to stay fresh.

    Alternatively (this is my favorite thing to do) you can freeze your tofu. This causes the water in the tofu to expand, causing the pores to expand. Once your frozen tofu is thawed, you can lightly squeeze out all the water, eliminating the need to press it with paper towels to remove the water. This way, the tofu absorbs more of your chosen marinade while adding a nice, chewy texture. Delicious! :-)

  9. Yeah i would say it goes bad within a two- three week period

    you should definately use it up before then, lol from experience i know rotting tofu smells terrible!

    I really like to marinate my tofu, in anything from BBQ sauce to hoison sauce for about an hour and then bake it until its browned on the outside. Tofu gets all its flavor from the marinade give it more time and the flavor is more potent.

    You can serve this baked tofu in a salad, wrap, with rice, whatever it's great and a good way to use up a whole package!
