Question:

I have these ingredients, what should i make???

I have some uncooked rice, black beans, corn, salsa, and diced tomatoes. I want to use these before they go bad, any suggestions?

(i was thinking tacos or whatnot, but i dont eat meat and i dont have any tortillas)

  1. Make a delicious dip. mix it alll togethor except salsa. And mayonaise with chili powder. Or burritos. Or this delicious thing where everything is all melted togethor-ENchiladas!

  3. Here's a recipe that uses the ingredients you have and a few more. You can add and heat the salsa, diced tomatoes and cooked corn after the onions are sauteed. Depending on how much salsa there is, you can reduce or eliminate the garlic, Tabasco and vinegar.

    Easy Black Beans and Rice Recipe

    Ingredients

        * 1 cup uncooked white rice

        * 1 Tbsp olive oil

        * 1 small onion, chopped

        * 1/2 green bell pepper, thinly sliced

        * 1/2 red bell pepper, thinly sliced (for added flavor you can substitute roasted red bell peppers or some chopped pimentos)

        * 3 cloves minced garlic

        * 2 16-ounce cans of black beans, rinsed and drained

        * 2 Tbsp white vinegar

        * A few dashes of Tabasco or 1/4 teaspoon cayenne powder

        * 1 teaspoon dried oregano or 1 heaping Tbsp chopped fresh oregano

        * Salt and pepper to taste

        * Optional Lime wedges and cilantro for garnish

    Method

    1 Cook rice according to package instructions. White rice usually takes 15 minutes to cook once the water is simmering, and 10 minutes to sit.

    2 Heat oil in a large skillet on medium high. Sauté onions and bell peppers for 3-4 minutes, until just beginning to soften, then add garlic and sauté a minute more. Add the black beans, vinegar and Tabasco or cayenne. Bring to a boil, reduce heat, cover and simmer for 5 minutes.

    3 Stir in rice and oregano. Add salt and pepper to taste.

    Serves 6.


  4. I would make a rice dish with the corn and diced tomatoes if they are fresh, and perhaps the salsa and beans as a side if they are fresh also.

    If any of the things you have mentioned are in unopened cans, then they will last months in the cupboard, and there is no need to "use them up"

  6. Jambalaya would be good.  Combine cooked rice with the black beans, corn and diced tomatoes, add some sauteed onions and celery and a dash of cayenne pepper. Let simmer for about 5 - 10 minutes, top with salsa.  Good!

  7. Honestly, you could just mix them all together (although maybe only a dollop of the salsa) and it would be delicious.
