Question:

I have three egg yolks...what should I do with them?

I baked a cake and the recipe asked for three egg whites. I don't know what to do with the egg yolks, all I can come up with is maybe scrambled eggs but I've never tasted it before with just egg yolks. Thanks for your help.

  1. Lemon pudding--even the type from the box calls for only egg yolks.    

    Add a whole egg to your yolks and a splash of milk and make scrambled eggs.

    Homemade noodles.     Beat the egg yolks,dash of salt,  add flour and a small splash of milk.     the mixture should be dry.    roll out on a floured surface and let the noodles dry.     once dry, drop into a pot of boiling broth (chicken, beef or vegetable) and cook till tender.      You could add chicken to the mixture and/or veggies.  

    French toast.     Egg yolks, splash of milk, some cinnamon.    Dip bread into mixture and fry on a greased griddle.    


  2. Scrambled eggs won't taste very good with just yolks. Maybe make some pasta or a custard. Those things generally just call for the yolk of the egg.  

  3. Eggs make a nice thickener for Hollandaise sauce. Or mixed with ricotta in a lasagna. How about tiramisu? Mayonnaise? Lemon curd? Oh, wait - you just baked a cake.

  4. EGG YOLK PASTRY

    5 c. flour, sifted

    4 tsp. sugar

    1/2 tsp. salt

    1/2 tsp. baking powder

    1 1/2 c. Crisco

    2 egg yolks

    Cold water

    Combine dry ingredients. Cut in shortening. Place egg yolks in a measuring cup and stir with a fork until smooth. Blend in enough cold water to make scant cupful. Sprinkle gradually over dry ingredients. Toss with fork to make a soft dough. Roll out as usual. Make pastry for three 9-inch two-crust pies, or 7 one-crust 8-inch pies. Roll in balls and freeze for a later use.

    EGG YOLK NOODLES

    2 egg yolks

    1/8 tsp. baking powder

    2 tbsp. cream

    1 tsp. Crisco oil

    Salt

    Flour, sparingly

    Beat eggs. Add baking powder, cream, oil and salt. Mix well. Add approximately 1/2 heaping cup flour or until it is no longer sticky. Roll out on a floured surface. Cut. These do not stick together. They freeze well.

  6. You can make a key lime pie.  Find a recipe that calls for only yokes.

  8. use it to plant..because I don't like the cholesterol/cholesterol, i would rather waste it than eat it.

  9. have you another egg ?add it to the yolks mix together some bacon and chopped toms make like a mixed scramble for dinner experiment
