I have to write a paper on how restaurants do research help?

I need to know what sources they use and how the solve problems. Any managers or waitress know how?

  1. Not sure exactly what you want.  Major chains hire companies to do surveys to tell them if an area would be good to locate a restaurant and what foods people in that area buy.  They also study the competition, before making any decisions. As far as in store surveys, etc. that would come later, as to what their customers like to order.

There are a lot of resources.  Culinary Institutes are always willing to help.  They have great libraries for this sort of thing.  Contact a local one( Johnson & Wales, CIA, just to name a few)  Also ask to interview an intructor.  When I owned a restaurant, I used a lot of different  sources.  Vendors are a great resource for food related issues.  The banks are great at helping you get set up with finances.  Other restaurant owners,beleive it or not, can be very helpful.  For ex.. we borrow food from one another all the time.  You need a lawyer to set up the corp. or LLC.  You need a good account to help you set up the books.  There is restaurant software for everyday things.  As for as problem solving, it is just like any other field.  You deal with each problem as it comes.  There is no manual.
