Question:

I have very thin chicken cultets that I would love to fill and roll up?

They are so thin (1/4) inch that if they are over-cooked, get dry REALLY fast. I want to put a filling in them, roll them up with a toothpike, and bake them but cannot find what to stuff them with. Any suggestions would be greatly appreciated.

I have this recipe for chicken saltimbocca.. 8 chicken breast pounded thin (you apparently don't have to do this part) 3 tbls olive oil divided...salt & pepper to taste...1 10 oz pkg frozen spinach .(i use fresh)...thawed and drained well...8 slices thinly sliced prosciutto...8 slices provolone cheese...1/2 cup parmesan cheese..1 1/2 cups dry white wine..brush each chicken cutlet w/olive oil and season w/ salt and pepper. Squeeze excess water out of frozen spinach, then season with olive oil and salt and pepper....place 1 piece of proscuitto, 1 piece of provolone, and a thin layer of spinach on each chicken cutlet..then sprinkle parmesan over the tops...begin at the short tapered end, roll up each chicken cutlet and secure w/ a toothpick..heat 2 tbls olive oil in large skillet over med heat..place chicken in skillet, then pour in wine..cook turning chicken until wine evaporates and juices run clear...about 20 mins


  2. 6 single chicken cutlets

    2 c. bread stuffing

    2 cans cream of chicken soup

    Milk to mix with soup

    1 c. grated cheese

    Preheat oven to 350 degrees. Holding chicken upside down in hand, place about 1/3 cup of stuffing in center. Fold chicken sides around stuffing. Carefully place chicken in baking pan (breast side up). Mix soup with enough milk to make a gravy consistency. Pour gravy over chicken. Sprinkle cheese over gravy and chicken. Bake 45 minutes to 1 hour. Serve.

    STUFFED CHICKEN CUTLETS  

    8 thinly sliced chicken cutlets

    Salt and pepper

    1/2 c. butter, room temperature

    1/2 tsp. oregano

    1 tbsp. parsley

    1 pkg. shredded Mozzarella

    8 tbsp. seasoned bread crumbs

    1/2 c. dry white wine

    Lay chicken slices on table. Sprinkle slices with salt and pepper. In small bowl, combine butter, oregano and parsley. Spread half the butter mixture over the chicken. Top each with seasoned bread crumbs and shredded Mozzarella. Roll each slice tightly and place in a casserole. Melt remaining butter mixture and brush over chicken, and sprinkle with bread crumbs. Add wine to casserole.

    Bake uncovered for 30 to 40 minutes. Do not overcook or chicken will be dry.




  3. A piece of thin sliced provolone and ham with basil?  Ham, and a mix of cream cheese (or goat cheese) and pesto?

  4. yessss! spinach, basil, red peppers, anything of that sort

  5. rice with vegetables.   Cheese and veggies.  Basically anything with veggies. Even just cheese with tomatoe sauce, but make sure the sauce has the tomatoe chunks.  anything goes/.  

  6. Mix thawed frozen spinach, ricotta cheese, and grated mozzarella cheese in a bowl.

    That will make a GREAT filling!!!
