I put two coats on , and some of the blue is still lightly showing through in some places. Should I do a third coat? or will the neutral paint colour I choose cover it as well. I am worried that 5 coats of paint will be a little much between the primer and the colour

  1. you should have used something like Kilz as a primer, as this is also a stain sealant. What you might do is have your primer tinted to the same shade of paint you are going to use. Don't worry about how much material you put n the walls, won't matter, but I would definetely suggest you cover the previous colors before painting. By the way, pink is the hardest color to cover up. Worse than black because you always have the rose colored shade showing through.

  2. Normally one would have the primer mixed to be close to the final paint color. If you are just using plain old white latex primer,   try BIN primer. I assume you are in the UK by your spelling of "colour", so I don't know if you can get BIN there. It is an alcohol based primer that covers any type of paint and keeps it from bleeding through. You can probably get an equivalent over there.
