  1. Seven and more course meals are a rarity today, these were more common in the 18th and earlier centuries.  A typical menu would include the following:

appetizer, soup, salad, poultry or fish, meat, cheese/fruit plate and dessert and coffee.  This would then be followed by port wine for the men with their cigars while the women retired to the parlor for sherry.  Between courses you would have been served sorbet to "cleanse the palate". These would have been between the poultry and meat course and perhaps between the soup and salad.

In Medieval times meals would have had even more course that would have include things such as whole stuffed swans, roasted boar, pheasant under glass, etc.

  2. Typically, a seven course meal would include an appetizer,  soup, salad, sorbet (to cleanse the palate), meat (such as poultry), meat (red meat or fish), and for the 7th course, dessert.

  3. It can consist of 7 different food courses offered or determined by the chef or the host of the event you are attending. There is no specific food item on the menu at that meal.

However meals with as many courses as that would probably have light food served at the beginning and then taper off into heavier food later on. Also, there will be breaks between courses for coffee, sorbet and possibly other "chill out" foods in between.

Large meals with many courses are fun as well as delicious!
