       Amount  Measure       Ingredient -- Preparation Method

        1      quart         water

        1      cup           sugar

        1      cup           fresh lemon juice

                             sparkling water -- (not tonic water,

                             -- like perrier)



    Mix first three togther.  Fill a tall glass 2/3 to 3/4 with Lemon

    mixture then fill with sparkling water.



    An intresting variation is to puree some fruit (raspberries,

    strawberries, etc) with a little superfine or powdered sugar and put

    that in the glass before adding the the lemonade and water.

  5. OMG...my favorite thing..lemon curd. Serve over pancakes, or make a tart, using the curd as a filling and top with raspberries.

    ****Lemon Curd****

    5 egg yolks

    1 cup sugar

    4 lemons, zested and juiced

    1 stick butter, cut into pats and chilled

    Add enough water to a medium saucepan to come about 1-inch up the side. Bring to a simmer over medium-high heat. Meanwhile, combine egg yolks and sugar in a medium size metal bowl and whisk until smooth, about 1 minute. Measure citrus juice and if needed, add enough cold water to reach 1/3 cup. Add juice and zest to egg mixture and whisk smooth. Once water reaches a simmer, reduce heat to low and place bowl on top of saucepan. (Bowl should be large enough to fit on top of saucepan without touching the water.) Whisk until thickened, approximately 8 minutes, or until mixture is light yellow and coats the back of a spoon. Remove promptly from heat and stir in butter a piece at a time, allowing each addition to melt before adding the next. Remove to a clean container and cover by laying a layer of plastic wrap directly on the surface of the curd. Refrigerate for up to 2 weeks.


  6. If you use lemon juice in your cooking and baking,just squeeze the juice put in a glass container and have ready lemon juice in your fridge.

  7. Decorate with the leftovers!

    Seriously!  Putting a few lemons in a simple glass bowl or cylinder is very pretty and elegant.

  8. When life gives you lemons, make lemonade :) Sorry, I was serious about that though. But If you'd rather not make lemonade you could make some lemon meringue pie, or you could freeze them, Then, when they are frozen you take them out cut them in half and stick a Popsicle stick in it. Its really good! Of you could make some fish and season it with lemon and pepper. ALthough you would have too many lemons to do that....Good luck :)
