Question:

I know a little about cooking with spirits and make wonderful desserts. But...?

a lot of recipes say to use your favorite wine/spirits/liquer or beer to cook with--- and that just doesn't tell me anything. All I know about mixed drinks is that I prefer the kind that doesn't burn your throat when you drink it. And I have been told that only ppl. who like to drink use spirits in cooking. All I can say is that they really jazz up my desserts !! I don't want to waste my money buying spirits that I know nothing about just b/c a recipe calls for blah, blah, blah. I love to cook for myself; I live alone and my meals are a high point of my day. I love my food to have good flavor and be tasty, not bland. Any suggestions...???

You should never use a wine to cook with that you wouldn't drink as well.  I suppose the same holds true for spirits and beer.  The burn will likely be cooked out when you make your dish.  The recipe should say what type of alcohol is required, like dark beer or white wine or bourbon or banana liquor, etc.  I only cook with what I like.  Sticking with popular brands is probably safe for cooking.  I wouldn't add alcohol to a dish unless the recipe called for it.
