I love vegetable beef soup but I'm a vegetarian now...?

Can anyone provide me with a vegetarian safe soup recipe for this please?

  1. Just use a really rich vegetable broth. You can use a bit of dark miso or some yeast concentrate (Marmite) to boost the flavor and darken it a bit.  


  2. The others who answered have given you some excellent ideas and recipes. I just wanted to add that I think the secret to why the commercial vegetable soups taste so rich and hearty is because of the barley they have in them. Barley is an ingredient in many good things, and it's often overlooked sometimes.

  5. Hi I'm not a vegetarian but I have a recipe. I make an all veggie soup with wheat noodles and for the beef flavor I use a beef bullion. Hope this works. Be bless in Jesus name.

  6. "Better Than Bouillon" makes a vegan "beef" bouillon that is awesome! I can find it a whole foods and at kroger.

  7. You can buy vegetarian soup stock, and seitan (wheat gluten) can be used in place of beef chunks.

    BTW: you do not want to use "vegetable Bouillon Cubes" as they contain gelatin (boiled down cow hoofs).

  9. There are vegetarian "beef" bouillon cubes, you just need to look out for them at the supermarket. Alternatively you could use vegetable stock/bouillon cubes

  10. i don't know what kind of beef bouillion cubes don't have beef, but I've never seen any and would not recommend buying them.  Sorry , to be perfectly blunt, there is no substitute for beef in vegetable beef soup.  There is no substitute for shrimp in shrimp creole, there is no substitute for chicken in chicken and dumplings....if you like vegetable beef soup why don't you just eat vegetable beef soup?

  12. Here's a recipe that you may enjoy:  (Of course go organic whenever possible)

    2 32 ounce boxes Emeril's All Natural Vegetable Broth

    1 15 ounce can tomato soup plus 1 can water

    1 15 ounce can diced tomatoes (we buy the plain, although you can try any flavor you like....)

    3 medium baking potatoes, peeled and cubed

    1 large parsnip, washed and sliced

    1 yellow onion, diced (look for vidalia onion when in season

    1 pack baby carrots, washed and cut in half

    1 bag frozen baby peas, (you don't need to thaw them)

    1 can shoepeg corn, drained

    2 tablespoons parsley

    1 tablespoon onion powder

    1 to 2 teaspoons salt and pepper, or to personal taste

    3 tablespoons A.1 steak sauce or to personal taste* (No beef or animal ingredients - this would be a good sub for the beef boullion cubes)

    Combine ingredients in large pot, bring to a slow boil, reduce heat, cover and simmer for 30 minutes, or until potatoes and carrots reach desired tenderness.

    There is another seasoning you may like better than the A1, but it does have anchovies in it.  It's called TryMe Wine & Pepper Worcestershire Sauce - the primary flavoring is fine sherry and a hint of hot pepper.  Go easy on this if you do try it - a little goes a long way.  Just start with a teaspoon and add more as needed.  We use a little bit of this on roasts (sorry, we're not vegetarian), and it's always a huge hit.

  13. Being a vegetarian involves giving up many of the good things in life, just like following any orthodox religion. So decide if it's worth it, and if it is, just accept the decrease in the quality of life.
