as long as the thermostatis is set low it will not turn the furnace on.

It should be just fine. The furnace will not operate unless the thermostat was turned up real high. On a separate note I always turn off the water supply when I leave. Burst pipes, a stuck valve in the toilet, a malfunctioning icemaker, a drippy faucet and a sewer backup. Any one of which can cause a flood leading to other problems with mold and mildew to ruin a home. Murphys law. If it can happen it will at the wrong time.
