I made banana pudding with good bananas and the bananas turned black in the pudding. Can you tell me why??

  1. You probably froze the bananas before putting them in the pudding. When bananas defrost, they turn into black mush, because the cells are destroyed in the freezing.


  2. it's a normal chemical reaction. apples will do the same. try dipping the slices in a little lemon juice 1st...it holds off that processs. also, don't let them be exposed to air for too long. try to cover them w/the pudding & then saran wrap asap.  

  3. Because they contain an enzyme that reacts with the air.

    Same for apples, potatoes and pears.

    I try to make sure the pieces of banana are totally covered by the pudding, which slows the browning process down.  But-they do still turn brown.
