  1. If you use olive oil you run that risk on a grill cause the grill will light on fire, thats why i don't use that for a marinade unless i have to, i use rubs when i girl it makes for a better steak.

  2. - raise the grill higher if charcoal

    - turn the heat lower if gas

    - don't leave it on as long

    - keep a spray bottle with water close by if flames on charcoal get too high

    - use less oil if the oil is dripping onto the coals

-clean the grill if there is build-up on it

    or finally

-eat at a restaurant instead of grilling at home

  3. Once you marinade them, just take them out and put them on a paper bag or paper towels (paper bags work better believe it or not). Then when you grill....make sure you have a hot area and an area where not many coals are, so that way when they start to look charred you can move them over to that side and continue cooking.  Also make sure that your coals are not flaming.  They should be white hot, but no flames. Keep a spray bottle of water handy to stop flare ups...Flare ups will char.

  4. Lower your heat.

  5. You should use paper towels and pat the steaks to remove the marinade before grilling.  This is even more important if the marinade contains sugar or honey because they tend to burn even more on a grill.  You can boil the remaining marinade (since it was in raw meat) and use it to baste near the end of the grilling time..for extra flavor.
