i'm decorating a cake with fondant and i need to know what the difference is between a "Commercial Buttercream" vs a "Fluffy Buttercream" and what they are BOTH MEANT FOR and what would work better

I think commercial buttercream is the icing that you can buy from a bakery that comes in a bucket and fluffy buttercream is what you make yourself.  I think either would work fine.  If you're looking for buttercream already colored, I know Sam's (if there's one in your area) sells precolored buttercream in one gallon buckets.  If you need a recipe for buttercream go to wilton.com.

  3. I perfer the non-dairy whipped topping.  Buttercream seams too heavy for me!

  4. Commercial buttercream is made from shortening. The whipped icing at the store if you will notice says nondairy because it is shortening and oil whipped together with powdered sugar and a little vanilla for flavor.

    This is my favorite buttercream recipe:

    2 C butter (room temperature)

    2 lb powdered sugar

    ½ C cornstarch

    1/8 t salt

    6-7 T water

    1 ½ t clear vanilla

    2 t butter extract

    ½ t almond extract

    Mix the dry ingredients (a stand mixer is best) and then add the butter as the butter is mixing into the dry ingredients add your liquids. Stop the mixer and scrape the sides and bottom. Mix all ingredients on high speed for 2 minutes – stop scrape the bowl again and then mix on high for another minute.
