I need Ideas for healthy and inexpensive meals?

Needs to be as healthy as possible please. Low carb and low fat if possible I am tired of the same old.

  2. Well, my hubby and I try to eat as healthy as possible...

    Your body still needs good carbs though! Complex carbs are good for you,(whole grain breads and such) simple carbs are not (white bread, white rice, etc.) but I am sure you already know that.

    You can have whole wheat pasta, I love the flavor of it! We usually do that with lean ground turkey, lots of spinach, bell peppers, broccoli, carrots, onions, garlic, marinara sauce. Or we toss it all with a sundried tomato pesto or regular pesto. Pesto is packed with so much flavor, a little goes a long way.

    Try doing stir fry, that's great for you without the carbs if you want to do that. Red, yellow and green bell peppers sauteed with olive oil, garlic, mushrooms, onions, snow peas, asparagus, chicken breast, broccoli. Season with a bit of salt, pepper, soy sauce. (I add a bit of cayenne b/c I love spicy.) I don't ever measure anything though, I just make whatever I think is enough for everyone...

    Baked chicken is always a favorite in my house. Cut a whole chicken down the back, place it in a baking dish, flat. Rub it down with some olive oil, brown sugar, a season all or season salt, pepper, etc. You could also squeeze some orange juice over the top of it instead of the brown sugar, gives it a nice citrus flavor. Bake for the recommended time for weight. Serve with some veggies of your choice!

    Leftover baked chicken: Refrigerate and cut it up into bite size pieces and make a chicken salad: cucumbers, carrots, tomatoes, apples, dried cranberries, shredded white cheddar cheese, walnuts, chives, olive oil and a little vinegar. (or a good viniagrette)

    Baked sweet potatoes are really good. Cut a sweet potato into strips (like thick cut fries) toss in olive oil and lay flat on a baking sheet. bake in the oven on 350 for 30 min. turn over and bake for an additional 25-30 min. until crispy on the outside. I like to season mine with some Tony Chachere's (which is like a season salt w/ garlic powder, salt, paprika, cayenne) and a touch of brown sugar to bring out the sweetness. They are really good and I can eat them all day long.

  5. Two simple meals.

    1.  Boil pasta.  While past is cooking stir fry 1 red pepper, 1 green pepper and 1 red onion (get creative here, you can stir fry almost any veggie - eggplant, snowpeas, zucchini, etc).  When pasta is done, drizzle with Extra virgin olive oil and add stir fried veggies.  YUM (if you have any left over beef or chicken add that too!).

    2.  Cook rice, and do the exact same thing.  Stir fry veggies and add left over meat.  You can add different spices and herbs (I love chives) to create a new flavour.
