  1. Tzatziki Sauce:

    16 ounces plain yogurt

1 medium cucumber, peeled, seeded, and finely chopped

    Pinch kosher salt

    4 cloves garlic, finely minced

    1 tablespoon olive oil

    2 teaspoons red wine vinegar

5 to 6 mint leaves, finely minced

if you dont have mint no problem it will be fine without ,i am greek so this will be fine

  2. 2 small cucumbers -- peeled and diced

    1 1/4 cup yogurt

    2 tablespoons olive oil

    4 cloves garlic -- minced

    1 tablespoon dill -- chopped

    1 lemon, juiced

    white pepper -- to taste

    salt -- to taste

Combine yogurt, olive oil, lemon juice, garlic and pepper in a bowl. Cover and refrigerate for one hour. Blend yogurt mixture with a whip until smooth. Dry cucumbers by patting with paper towels. Add Cucumbers and dill to yogurt mixture. Salt and pepper to taste.

  4. Alton Brown is always a great place to start when you are trying to make something for the first time..  I would probably skip the mint leaves and use dill instead though..

as far as buying it, I always buy it at costco..  you get a huge container for about $5-6 and it is delicious..  they market it as a dip since it is made with sour cream..  I have had it on tomatoes, chicken gyros made at home, pork roast, with pita chips and hummus..  delish!!

  5. This is the recipe I use.  If I can't find yogurt then I substitute it with sour cream and I also like to add in the juice of one lemon to add acidity and brightness.

    Tzatziki Sauce:

    16 ounces plain yogurt

1 medium cucumber, peeled, seeded, and finely chopped

    Pinch kosher salt

    4 cloves garlic, finely minced

    1 tablespoon olive oil

    2 teaspoons red wine vinegar

5 to 6 mint leaves, finely minced

Place the yogurt in a tea towel, gather up the edges, suspend over a bowl, and drain for 2 hours in the refrigerator.  Place the chopped cucumber in a tea towel and squeeze to remove the liquid; discard liquid. In a medium mixing bowl, combine the drained yogurt, cucumber, salt, garlic, olive oil, vinegar, and mint. Serve as a sauce for gyros. Store in the refrigerator in an airtight container for up to a week.

  6. look up greek restuarants in your area and call them to see if you can get a cup of it to go.  That is what I did (after I decided I wasn't going to hang a towel of yogurt in my kitchen for a few hours) and they sold me a huge bowl of it for $5.  It was awesome!  I had enough left over for the next day.
