I need a cold recipe with goat cheese

Question

its warm out so I dont want to use the oven, stove, etc. but I do want to use my goat cheese. Any suggestions?

Goat Cheese Stuffed Tomatoes

Ingredients:

Couturier 5.5 oz Log Flavored with Garlic & Herbs

8 Small Tomatoes

3.5 oz Creme Fraiche

1 teaspoon of fresh chopped basil



Directions:

1. Wash and dry the tomatoes

2. Remove the top of the tomatoe and dig out the seeds with a teaspoon

3. Salt the inside of the tomatoes and place them upside down to let them drain

4. In a mixing bowl, blend together the Couturier, the creme fraiche, and the fresh basil

5. Fill in the tomatoes with the mixture

6. Seasoned to taste with fresh ground pepper

7. Served chilled

Goat cheese is my favorite type of cheese. Since it is really salty, I usually use it in unison with rather sweet foods. Cantalope topped with goat cheese and honey is good, and strawberries with goat cheese is goood as well. I often just make sandwiches with cold cuts, dark lettuce, tomatoes and goat cheese.

But my all time favorite: Tomato Sandwich

4 thick slices tomato

A handful of bacos

Miracle Whip, Garlic Mayonnaise, or regular Mayonnaise

Wheat bread or other

Goat cheese

Spread the bread thickly with mayo and top with tomato, a large amount of goat cheese, and bacos to taste. when I was a kid, I used to eat this all the time, because it is simple, doesnt take much time and is really delicious.

goat cheese sandwich. can eat it with whatever toppings you have. if its good goat cheese then i would eat it with crackers and fruit and a glass of wine.
