I need a demographic for who uses catering, how often, how much do they spend..?

Top use of catering in BC is corporate, especially with the upcoming Olympics.  Next would be groups with highly desposible income, which would mean 45-65 in specific regions (West Vancouver, Shaughnessy, Richmond, North Burnaby) and couples getting married (22-32 year age range) although for stand alone caterers it can sometimes be a volatile market as the all inclusive hotel, golf club, social clubs are marketing much of their services to weddings and giving great cheap packages where any losses are offset by other areas of their business.  If you are just starting out, check around, as there are at least a few caterers which would probably be willing to give you some mentoring type info as long as they don't feel you will be cutting in on their business.  Event planners may also be able to provide you with information.  Average spend for a catered event depends on the type of event (corporate, family style - such as bar/bat mitzvah, baptism, wedding...the list goes on).
