I need a foolproof recipe for a 'crisp' .?

The recipes I've used never crisp up. Aren't they suppose to melt when they bake and harden up a bit? Mine always stay powdery like.Could it be the fruits fault? If the fruit isn't juicey enough could that be the problem?My recipe is 1c flour,1c oats, 1 stick butter,1/2c br sugar,1tsp cinnamon, 1/2tsp salt

Make up your mixture for the crisp topping from the recipe you have, then spread it out onto a baking sheet and bake it for 5 minutes at 400 degrees and let it set for an hour or so cooling before using it, meaning before placing it on your fruit then baking the entire concoction in the oven for the required time. This coats the crisp with the oil from the butter and seals it some from the juices of the fruit which can keep it from crisping up during baking.

    The reason that other person hasn't any problems with their crisp is because mayonnaise is mostly oil, while butter is mostly water, so the crisp mixture gets coated throughout during the mixing. The problem with it, though, is that it won't have the buttery flavour that you get from using butter, or the extra bit of moisture just under the crispy outer shell of it.

  4. I frequently use this recipe and haven't had any problems with it.

    4 cups blueberries

    1 cup unsifted flour

    3/4 cup sugar

    1/2 cup mayonnaise

    1/2 teaspoon cinnamon

    Place fruit in ungreased 8 x 8" baking pan*. Stir together flour, sugar and cinnamon; blend in mayonnaise until mixture resembles coarse crumbs. Sprinkle/spread over fruit.

    Bake 35-40 minutes at 350° or until browned. *If using a glass-baking pan, reduce oven temperature to 325°.

    Keep blueberries at their freshest by storing them unwashed in the refrigerator. Wash the berries just before you use them.


  5. Sounds like you need higher heat (up to 425ºF) and more time in the oven (about 25-30 min).  If that doesn't cure it,  add a bit more butter in the topping for the crisp....
