  1. Crock-Pot Squirrel

    1 squirrel

    1/2 Cup Flour

    1/2 tsp salt

    1/4 tsp pepper

    1 (10 3/4 oz.) cream of mushroom soup

    1 can water

    2 Tablespoon Butter

    Cut up squirrel, roll in flour, salt and pepper. Brown in butter. remove the meat from frying pan. Save pan drippings and add soup and water to the pan. mix well. Place squirrel in crock-pot, pour drippings and soup mixture on top of squirrel. cook on high for 4 hours. turn on low until ready to serve.


  2. I cooked it the way my son and husband had it at their hunting camp. I simmered 2 squirrels for about 4 hours until the meat fell off the bones. Then I picked the meat, put it back in the squirrel water and thickened it up; not as thick as a gravy but thick enough to support dumplings. Then I made some dumplings out of Bisquick and dropped them by the teaspoon into the boiling pot. Put the cover on and cook for about another hour and you have squirrel and dumplings! The guys said it was really good and ate most of it!

  3. After my husband butchers it and cuts it up, I usually soak it overnight in a salt/sugar/water solution in the refridgerator.  That removes some of the blood and gaminess (especially if it was an older squirrel) and tenderizes it some.  Then I dredge it in seasoned flour and fry that sucker up in oil like chicken.  Fried potatoes and pinto beans and onions on the side and you've got a meal!!!

  5. squirrel does not have very tender meat. it needs to be stewed or braised for quite a while. use it as you would a less desirable cut of beef or pork or lamb. low and slow.
